Smashed Sweet Potatoes

  • 4 medium sweet potatoes (or 3 large sweet potatoes)*
  • A light spray of olive oil
  • 3 tablespoons melted butter
  • 4 cloves garlic , crushed
  • 1 tablespoon fresh chopped parsley
  • Kosher Salt and Black Pepper to taste
  • 2 tablespoons Parmesan Cheese


  1. Preheat the oven to broil or high heat.
  2. Cut each sweet potato into quarters.
  3. While the oven is preheating place sweet potatoes in a large bot of boiling salted water for 20-25 minutes. To test if its done, take a fork and if it tender, drain the potatoes. 
  4. While potatoes are cooking mix together the butter, garlic, and parsley. 
  5. Grease a cooking tray or baking sheet and arrange sweet potatoes onto the sheet. 
  6. Pour the premade mixture onto the potatoes and top it with slat and pepper.
  7. Boil for fifteen minutes. Remove from oven and sprinkle cheese.
  8. Return to over until cheese is melted.
  9. Remove from oven and enjoy!
